![]() I have found that many people add far too much milk, resulting in soupy, tasteless mac. The creation of the sauce separately helps to ensure a consistent texture of the cheese sauce and also allows for much more precise control over milk quantity. (*Side note – Little kids love when you add a pinch of sugar and skip the other seasonings.) Any number of seasonings will work though. I personally like a bit of chili powder, cayenne, garlic powder, smoked paprika, fresh ground black pepper, and kosher salt. Mix the sauce and noodles and season, please for the love of all things good, season. It is safe to return the noodles to the pan. It will look very orange (like the picture on the box) as a result of the addition of butter along with the reduced quantity of milk. Mix these together in the pan until all of the cheese powder is dissolved (add a bit more milk if the powder is not dissolved). Then add the contents of the cheese pouch and around half of the recommend milk quantity. First place the butter in the pan while it is still warm and let it melt. This is a multi-part step which occurs before the noodles are returned to the pan. The third step should be “Creation of the Sauce”. Step three should truly be split into two separate steps, but here in ‘Merica, the land of the fat and lazy, it is condensed to three (It’s as easy as A, B, C, 1, 2, 3… I blame this song). Step two is fine, you just drain the noodles without rinsing. They should still have some springiness and resilience if compressed. This is crucial because it allows the cheese sauce to penetrate the interior of the noodle, thus delivering an extra-cheesy roundhouse kick to your taste-buds. They should no longer be crunchy, but only just. The key to remedying this problem is testing the noodles periodically. ![]() ![]() 10 minutes is long enough to produce flaccid noodles that collapse on themselves immediately after being removed from their water. I am willing to bet that a large percentage of the world population (probably around 90%) prepares this dish incorrectly. I know this because the directions are WRONG!
